Yeah, you have to change blood with them to turn and even then it's not always a done deal.

The ONLY way vampires can be permanently destroyed is, if by some faint miracle, you get close enough to one to rip and tear its flesh and limbs to pieces, then burn the remains in a bonfire.
(Sorry if that's not dignifed-sounding, but if you want to kill a vampire, you have to really hate him or her.)
There's only two creatures in this world that can commit such an act.
A rogue vampire...
